Banana Nut Bread



INGREDIENTS:
2 cups white sugar
1/2 cup brown sugar
1 cup shortening
3 eggs
1 1/2 cups mashed bananas (I use 4 black, mushy bananas)
3 cups flour
1 1/4 cups buttermilk
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 teaspoon vanilla extract
1 1/2 cup chopped walnuts
1 tsp cinnamon
1/2 tsp nutmeg

DIRECTIONS:
Preheat oven to 350 degrees.
Cream together shortening and sugar. Add eggs one at a time, beating well after each addition. Mix in bananas, buttermilk, and vanilla. Mix in flour, baking powder, and baking soda. Stir in nuts, cinnamon and nutmeg if desired. Pour batter into two greased 9x5 loaf pans.
Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.

  1. With your love of baking and cooking, you should check out getting a Kitchen Aid stand mixer if you don't already have one. I got one on sale after Thanksgiving and I LOVE using it. I bake all our own bread now and I love using all the fun attachments like the pasta maker.
