Avocado-Butter Lettuce Salad
Another great find in the Cooking Light April 2012 magazine!
INGREDIENTS:
1 cup thinly sliced red onion
2 TBL olive oil
1 TBL fresh lime juice
1/4 tsp salt
1/4 tsp pepper
3 cups torn butter lettuce
1 cup sliced avocado
DIRECTIONS:
Combine first 5 ingredients in a large bowl and let stand for 10 minutes. Add lettuce and avocado; toss gently. Serves 4.

Takes about 15 minutes to make!
