Eggs in Hash Brown Nests

I've been on a kick to try new breakfast items on the weekends- and I thought these would be fun! Thanks to Pioneer Woman, for another great recipe. I did use refrigerated hashbrowns instead of fresh potatoes, but they still turned out just fine! You can find the recipe HERE.

Chunky Monkey Pancakes

YUMMY!! We have the best peanut butter ever- and you can actually order it HERE- the coconut peanut butter is amazing!! If you want an easy way to make it- just mix some coconut oil into your peanut butter and it's pretty close! There is no real recipe on this meal- we make our pancakes using the bisquick recipe on the back (the fluffy one!) and then I coat it in our coconut peanut butter, apple bananas, and granola (I've been buying the organic chia granola with coconut flakes!). So good... try it out!

Vanilla French Toast

INGREDIENTS:

  • 2 eggs
  • 1/2 cup 2% milk
  • 1 tablespoon sugar
  • 1 teaspoon vanilla extract
  • Pinch salt
  • 6 slices texas toast bread
  • strawberries
  • granola
  • whipped cream
  • pure vanilla syrup
DIRECTIONS:
In a shallow bowl, beat eggs; add the milk, sugar, vanilla and salt. Soak bread for 30 seconds on each side. Cook on a greased hot griddle until golden brown on both sides and cooked through. Top with strawberries, granola, whipped cream (homemade is the best!), and pure vanilla syrup (my husband recently traveled and brought some home that was from New Zealand... so good!).

Crockpot Breakfast Casserole

During the week, I get into a rut of feeding my kids instant breakfast- bars, oatmeal, fruit or yogurt. I saw the idea for a crock-pot casserole on pinterest, and tweaked this recipe for our tastes. I put it together before going to bed, and it was ready when we woke up- the kids loved it and I was happy to not have to cook breakfast! 


INGREDIENTS:
Shredded Hashbrown Potatoes, Frozen
Jimmy Dean Turkey Sausage Crumbles (these are found in the lunchmeat section- they are pre-cooked)
Mozzarella Cheese, Shredded
Parmesan Cheese, Shredded
Diced Tomatoes
Green Onions, Sliced
Salt and Pepper
6 eggs
Milk

DIRECTIONS:
Layer the bottom of the crock pot with shredded hashbrowns (I used about 10 oz.) and then in layers, sprinkle in sausage, cheese, tomatoes and green onions. In a bowl, whisk eggs with milk and salt and pepper. Pour into the crock pot and cook for 6-8 hours on low. Enjoy!

Andy's French Toast

I am not a breakfast person- mostly because I'm not a morning person... during the week, we eat breakfast bars or instant oatmeal. However, on the weekends, it's a different story because my husband loves to cook breakfast, and he is a morning person! He reluctantly shared his "secret" recipe:

INGREDIENTS:
3 eggs
Milk (even with eggs)
Sugar, to taste (1 TBL)
Cinnamon, to taste
Texas Toast (stale is best)

DIRECTIONS:
Sleep in on Sunday morning, while your husband does the following:
Whisk eggs and milk until well blended. Add in sugar and cinnamon and continue to whisk. Soak bread in mixture- one piece at a time and then cook on a pre-heated griddle or skillet. Top with butter, maple syrup and powdered sugar. Awesome with hot coffee!

Andy's Blueberry Pancakes

This is Andy's contribution to our Recipe Blog...He is the breakfast man! His specialities are pancakes and an egg/bacon scramble. Yum!

INGREDIENTS:
Bisquick Shake n' Pour Pancake Mix
1 1/2 cups of water
Blueberries (Chocolate Chips or Sprinkles are also good!)

DIRECTIONS:
Pour water into the pancake mix. Shake. Heat griddle or skillet. Pour pancake mix into circles, and sprinkle blueberries on top. Flip when bubbles appear around the rim. Serve with butter and syrup!
